Pancakes | Power Shake | Chocolate Cake in a Cup | Mint Truffles |
Pancakes
What you need:
1½ cups flour
¾ teaspoon salt 2 teaspoons baking powder2 tablespoons sugar
2 eggs1¼ cup milk
1 teaspoon vanilla essence 3 tablespoons oil
What to do
Put the dry ingredients (flour, salt baking powder and sugar) in a bowl and stir
Make a hole in the centre and put the egg, milk, vanilla and oil in it, then stir the whole lot together until most of the lumps are out of it.
Get Mum or Dad to help you to heat a frypan and then put about ½ cup of the mixture in the pan. When the bubbles burst on the top and start to stay open, gently turn the pancake over. Cook for another minute and then put onto serving plate.
Once you have made enough, turn off the stove.
Top your pancakes with your favourite topping: butter and syrup, chocolate sauce and whipped cream, chopped strawberries, bacon and maple syrup. EAT ! ! !
Cool Tip:If you have mixture left over you can cook the extra pancakes. Then when they are cold, stack them with waxed paper between them and put them in a plastic bag. Gently squeeze out the air and seal the bag. Put it in the freezer until the next time you are puckish.
Take out the pancakes you want to eat and heat them in the microwave for about 20-30 seconds, slather on the topping and scoff!
Milkshakes can be fun. These shakes give us calcium, vitamins and protein.
What You Need
Blender or Stick Blender1 cup milk
¼ cup whole milk powder
1 scoop icecream
1 banana
What To Do
Put all the ingredients in the blender cup and blitz until thick, creamy and smooth. Mmmm mmm mmm.
Make it different...
Try replacing the banana with a handful of frozen raspberries, strawberries or boysenberries.
Add 2 tbs of smooth peanut butter or nutella to your banana shake,
In place of the banana use 2-3 mint slice biscuits, for a minty cookies and cream!
Mango slices or soft fresh apricots can be used instead of banana
Add a pinch of cinnamonUse chocolate syrup or instant coffee and add a handful of ice cubes for the coooool frappe feel
Mmmmm . . . Chocolate Cake in a Cup!
What You Need
1 large coffee mug, or a crockery dish
4 tablespoons plain flour (do not use self-rising)
½ teaspoon vanilla essence
Secret Additive: a mini moro bar, flake bar, or a couple of squares of your favourite chocolate.
Optional Extras choose your favourite topping, or use them all! Chocolate chips, choc toppping, whipped cream, cherries
What To Do
Add dry ingredients to mug stir with a fork
Add egg, vanilla, milk and oil and mix until it is not lumpy
Secret additive: push a mini moro bar into the centre, or a couple of squares of your favourite chocolate
Set mug in the microwave & cook for 2½ to 3 min on high. It may be shorter or longer time depending on your microwave)
The cake will rise over the top of the mug, but don't be alarmed! CAREFULLY remove from microwave
Allow cake to cool a little (if you can wait that long) Beware! It will be VERY hot!
Choose your favourite topping and devour.
Cool Tip: If you really like this cake, it is easy to make up a ‘cake mix’ so that you don’t need to get all the dry ingredients out each time.
Here’s the mix: 2 cups flour, 2 cups sugar, 1 cup baking cocoa, 2 teaspoons baking powder. Mix it well and put it in an airtight container. Use a rounded half cup of this mix instead of the dry ingredients above.
Make it different... Try dropping in some fresh raspberries before cooking (beware they get very hot), or take out the cocoa and add chocolate chips, or blueberries
Chocolate Mint Truffles
These are great at Christmas, but you can make them anytime, they are so easy.
What You Need![]()
1 packet mint slice biscuits (chocolate covered, mint filling, biscuit base)
2-3 tablespoons cream cheese
What To Do
Put the biscuits in a blender and blitz until small crumbs, add 2 tablespoons cream cheese and blitz.
Try rolling a bit of the mixture into a ball.
Does it stick together? Yes = Good, No = add the rest of the cream cheese and blitz a bit longer.
Roll into balls, about teaspoon size (or bigger if you can get away with it!)Keep in the refrigerator, nibble whenever you can get your hands on them.
Make'm look pretty... (girly stuff)
You can dress these up by rolling them in cocoa, coconut, chocolate hail, 100s & 1000s, nuts, or drizzling over a bit of melted chocolate
