Spring is in the air (or am I just wishful thinking!!), during these cold frosty days physio, keeping warm and dry and making sure you are eating heaps of yummy, high calorie snacks is VERY important!
Making physio a part of your everyday routine will keep you wll during the long winter months and HOPEFULLY will help to keep you out of hospital for longer!
We've got a few new recipes for you to try. They are not only VERY yummy (most important) but all three of these are fun to make
Nigella's Peanut Butter Squares
Have you ever tried Reece's Peanut Butter Cups? They are SO good! Here is a home made version and they don't even need any cooking!
For the base, mix together until smooth, the following:

50grams of dark cane sugar
200grams of icing sugar
50 grams of unsalted butter
200 grams of smooth peanut butter
press this into a 23cm square brownie tin that you have lined with greaseproof paper
To make the topping
melt 200grams of milk chocolate, 100 grams dark chocolate and 1 tablespoon of butter (in the microwave is easiest, for about a minute or two on medium setting)
Spread this over the base and put the tin in the fridge to set.
When it is set you can cut into small pieces and ENJOY!!!
Now here's a recipe for all those (like me) who love Mars Bars AND rice bubble cake!
Mars Bar Slice![]()
o 100g Butter
o 3 cups Rice Bubbles
o 200g Milk or Dark Chocolate
o 2 tsp Oil
o 1x 55g Mars Bar (optional for decorating top)
1. Line slice tin with baking paper
2. Heat Mars Bars and butter together until melted and mixed well
3. Remove from heat and stir in Rice Bubbles
4. Press into lined tin and refrigerate for 30 minutes
5.
6. Spread over slice
7. Refrigerate for 30 minutes
8. Slice into squares
9. The last Mars Bar can be cut into pieces and used to decorate each square
One thing that is really fun to make in winter is SOUP! Here is a scrummy recipe for pumpkin soup that looks amazing and is really fun and easy to make

1 whole buttercup squash
2 cups grated gruyere cheese
90 grams of butter
1 cup of cream
2 tsp of chicken stock powder
salt and pepper
garlic
All you have to do for this great recipe is take your pumpkin and carefully (you will probably need a grown up to help you with this) slice of the top of the pumpkin to make a 'lid'
Scoop out the seeds so you have a nice 'bowl' in the middle of the pumpkin
Into the pumpkin, put the cheese, the butter (cut up into small knobs), some garlic, the cream and the stock and seasonings.
Put the 'lid' of the pumpkin back on and put into a deep baking dish
Bake for 2.5 hours at 200 degrees C
Once the pumpkin is cooked, take it out, carefully remove the 'lid' and have Mum or Dad scoop round the sides to get the flesh of the pumpkin away from the skin. Stir it VERY carefully in the pumpkin to make creamy/ cheesey pumpkin soup!
You can dip chunks of garlic bread into this or even crispy pita bread that has been baked in the oven! YUUUUUUMMMM!
You can also add in (if you like these things)
curry powder (2 tsp)
chopped up spring onion
herbs
paprika
